Flax seed Crusted Spicy Chicken Tenders

Flax seed crusted Spicy tenders! Super healthy, moist from the inside, delicately crisp crust and perfectly spiced is definitely a finger-licking good
Prep time: Cook time: Total time: Yield: serves 4
For Chicken Tenders
2 Boneless chicken breasts, cut into strips
1 tsp Garlic powder
1 tsp Paprika
2 Tbsp Hot Chili Sauce, I used Sriracha
1/2 tsp Black pepper powder
1 tsp Worcestershire Sauce
For Flax seeds crust
1 Cup Ground Flax seeds, I used Linwoods
1 tsp Salt
1 tsp Black pepper
1 tsp Garlic powder
1 tsp Paprika
1/2 tsp Oregano, dried
For Egg Mix
1 Tbsp Mustard paste
1 Tbsp Hot chili Sauce
1/2 tsp Salt
1/2 tsp Black pepper
1/2 tsp Paprika
For Chicken Tenders: In a prep bowl add chicken along with all the Chicken tender ingredients mentioned and marinate for 15 minutes
Mix the Flax seeds crust ingredients together in a wide bowl and Egg mix ingredients in another bowl.
Heat a pan with 2 tbsp oil, Place chicken tenders in Flax seeds crust, shake away any excess from each piece and then coat it with the Egg Mix
Before frying dredge the tenders once again in Flax seed crust mix and place in the pan. Fry for 5 minutes or until golden and cooked through
Drain the fried chicken tenders on kitchen paper
Serve hot with your choice of sauce. I served it with home-made fresh plums chutney
Alternatively, you can bake these Chicken Tenders. Preheat oven at 350 degrees, once the tenders are coated place on a baking tray sprayed with cooking oil. Brush some oil on the tenders as well and bake for 15 minutes or until golden and cooked through

This father’s day just say it to him, how much he means to you and make it extra special for him. My father is the best father in the whole world, I know everyone says that but he really really is. He has been there throughout supporting and encouraging me to whatever I ever wanted to do. He encouraged me to go for all those crazy ideas that I ever had and I’m glad I did!

Baked Chicken Cheese Discs

Baked Chicken Cheese Discs! The easiest appetizer to wow your guests, flavorful, crispy, cheesy and delicious.
Prep time: Cook time: Total time: Yield: serves 6
For Baked Chicken Filling
4 Tbsp Unsalted Butter
2 Tbsp All-purpose Flour
1 Cup Milk
1/4 Cup Cream
1/2 tsp Salt, or to taste
1/2 tsp Black pepper powder
1/4 tsp White pepper powder
1 Cup Chicken, boiled and shredded
1 Potato, boiled and mashed
1/2 Cup Spinach, boiled
1/2 Cup Sweet Corn
For Herb Butter Spread
3 Tbsp Salted Butter
3 Tbsp Cheese Spread
1/4 tsp Italian Seasoning
1/4 tsp Black Pepper powder
1 Garlic clove, minced
12 Bread Slices
1/2 cup Cheddar Cheese, grated
Oil for brushing
For Baked Chicken Filling: In a heavy bottom pan, melt butter over medium heat, add flour and mix until foamy. Now add milk stirring continuously using a whisk, to avoid lumps. Let boil and thicken. Remove from heat and add cream along with all the seasonings, now add chicken, potato, spinach and mix well. It will be thick in consistency
For Herb Butter Spread: In a bowl, mix together all the ingredients into a smooth spread
For Bread Discs: Take take two round cutters, one big and the other almost two size smaller than the big cutter. Cut each bread slice with the big cutter and to make a pair cut one of each pair with smaller cutter, making a ring.
Assembling: Generously spread Herb butter on the whole disk and put the bread ring over it, press slightly.Fill the ring with the prepared baked chicken filling and sprinkle grated cheese on the top
Preheat the oven to 180 degree Celsius. Lightly grease the baking tray with oil, place all the discs on the baking tray. Using a brush apply oil to the sides if the disk so its turn crisp and golden. Bake for 8-10 minutes or until cheese melts and discs are golden and crisp. Serve hot!
Veggie Lovers can skip chicken and add their choice of vegetables, capsicum, carrots etc.
This can be made with any type of filling, make it as healthy as you want and as cheesy as you fancy
Every day the same question pops up “What to make for Lunch today?” and when the same question is asked on a weekend the response has to be something that’s not the usual and really delicious.
What better way to spice up the weekend lunch than with a Chicken Paratha Roll (Pakistani Flatbread Wrap) stuffed with flavorful chicken, pickled veggies and spicy chutneys. The best thing about it is, that its a wholesome meal and can be prepared with leftover chicken too. Its as simple as assembling it all together (if that makes sense)
For this recipe, I’ve made the Paratha (Flatbread) myself but you can always use store bought frozen paratha in case you don’t feel like making your own and keeping it all quick and simple.
As with all wraps, you can use filling of your choice. For me it had to be this spicy chicken cubes, with chutneys and pickled onions that were wrapped in the paratha roll and gave those zesty, zingy and spicy flavors that were sure to tickle those tastebuds!

Chicken Paratha Roll (Pakistani Flatbread Chicken Wraps)

Chicken Paratha roll, spicy chicken with tongue tickling chutneys and pickled onions wrapped in a paratha, is a treat to the taste buds!
For Chicken: Marinate the Chicken in above mentioned ingredients, except Oil for 15- 20 minutes. Then in a pan add oil and the marinated chicken and cook it on medium-low heat until chicken is tender and the water dries
For Paratha Dough: Mix both flours, salt and ghee. Knead it into a dough, add water as required. Keep aside for half hour. Prepare the paratha, like a regular paratha.
For Green Chutney: Follow the instructions in link above. Chutney should be thick in consistency
For Base Sauce: In a small bowl mix mayonnaise and ketchup together
For Pickles: In a bowl add half vinegar and onion slices. In another bowl add other half of vinegar and cucumber slices. Keep them dipped for 20 minutes at least.
For Assembling: On the base of the paratha apply the prepared base sauce. In the center, place the chicken pieces horizontally, add the green chutney on the chicken pieces. Top it with pickled cucumbers and onion slices. Make a roll of the paratha and cover half of it with foil paper so that it stays intact. Serve with Green chutney or ketchup.
To give the chicken smoked BBQ effect. Heat a coal on a burner. Take a piece of bread or chappati, put it in the middle of the chicken pan. Place the coal on it and drizzle a few drops of oil. Cover the pan with the lid for 10 minutes. Remove the coal. The chicken will now have smoked taste.
Whenever we visit our favorite Chinese restaurant, for soup we always order Hot & Sour Chicken Soup. Its not the only soup we like but this is the family-favorite kind so it has to be this. Here I’m sharing home-made Hot& Sour Soup recipe which is definitely restaurant worthy! and will keep you warm through the winters.
Why I’m calling it restaurant worthy is because its very close to what you get at the restaurant and it tasted really really good. Although its not like the authentic Chinese Hot & Sour soup, as in this part of the world we’ve transformed the Chinese dishes according to our tastes and requirements. As the name suggests its Hot & Sour, here the ‘Hot’ comes from the chili and garlic paste and pepper whereas the ‘Sour’ comes from vinegar.
Many Hot & Sour Soup recipes include Mushrooms, bamboo shoots, Tofu etc. These ingredients may not be available in some areas or can be hard to find so with this soup you can include anything that is available i.e. your choice of meat or vegetables.
If you’re a veggie lover and don’t want chicken in your soup, you can always skip that part and follow the rest and enjoy Vegetable Hot & Sour Soup – it’s that simple 🙂 To dress up the Soup it is served with different sauces that includes: Chili Sauce, Soy Sauce and Green Chilies and vinegar

Hot and Sour Chicken Soup

This Hot and Sour Soup recipe is truly Restaurant Worthy!- Make it to believe it
Prep time: Cook time: Total time: Yield: serves 4-6
6 Cups Chicken Stock
1 Cup Chicken, boiled (cubed or julienne)
1/2 Cup Carrot, diced small
1/2 Cup Cabbage, shredded
2 Tbsp Soy Sauce
1 Tbsp Red Chili sauce with garlic
1/2 Tbsp Black Pepper Powder
2 Tbsp White Vinegar
Salt to taste
3 Tbsp Cornflour
In a pot bring chicken stock to a simmer, add chicken, soy sauce, red chili sauce with garlic, simmer for a few minutes
Now add carrot,cabbage, salt, black pepper powder, white vinegar and bring to a soft boil. let simmer for 2-3 minutes. Do a taste-check here and adjust seasonings according to taste
Now mix cornflour in water and add to the soup while stirring till soup has thickened and reached desired consistency
Bring the soup to simmer and pour beaten egg in a thin stream in to the soup. Let stand for about 10 seconds and give it a stir. You can do this in 2-3 additions
Soup is ready! Serve hot with the soup dress-up sauces
Garnish with spring onions and serve with crackers, bread sticks or croutons
Soup Dress-up Sauces
For Red Chili Sauce: 1 tsp red Chili powder, 1/4 cup white vinegar and a pinch of salt. Mix all these ingredients together into a sauce
For Green Chili & Vinegar: 2 Green Chilies, sliced, 1/4 cup white vinegar. Add green chilies to vinegar to serve with soup
For Preparing Chicken Stock: Take 2 Chicken breast pieces, add these to a pot of water along with salt, black pepper corns, garlic cloves and sliced onion. Let chicken cook, once tender remove the pieces from stock and strain the liquid. Chicken stock is ready. You can even use chicken carcass for preparing stock
For a bit crunchier vegetables don’t cook them for long
Consistency of the soup can be thick or runny you can adjust that by increasing or decreasing the amount of cornflour+water mixture
For Vegan version of the soup: Use Vegetable broth instead of Chicken broth, Omit Chicken and egg
