Vegetable Stuffed Rice Balls

  • By
  • January 1, 2018
Got left-over rice? Let’s give it a new delicious twist. Sounds great, right? As part of the series of recipes with Rice that are creative, fun and delicious, this recipe of Vegetable Stuffed Rice Balls is not only delicious but is an awesome way to use those left-over rice and turn them into crispy and flavorful snack.

Inspired by the Italian favorite Arancini (Italian Rice balls) that are made with Risotto (Arborio rice, an Italian rice variety), these Vegetable Stuffed Rice Balls are made with Basmati Rice. I’ve used Reem ka Steam Basmati Rice for creating this recipe. I had so much fun working on rice recipes and specially with Reem ka Steam Rice as the rice quality is great. It’s long grain rice, fragrant and takes less time to cook too.

What makes these rice balls even more exciting is the stuffing. The crisp outside, soft creamy inside with colorful vegetables, the combination is delicious. The breadcrumbs give the added crunch to it, making it even more crispier. I’ve used vegetables as stuffing for rice balls, you can use meat, cheese or any kind of stuffing as per your liking. You can be as creative as you want and go according to your taste palette.

Place a tablespoon of filling and a pice of mozzarella in center along. Add a little more rice on the top and start closing it around filling into a ball shape.
  6. Dust the rice balls with flour, then roll in the egg and then in breadcrumbs until completely coated.

Breakfast-Pizza-Pancake-Crust-TTTB

From the title of the post most of you would be like – Pizza for Breakfast? Well, Yes! This one right here is a Breakfast Pizza with no ordinary crust but a Pancake Mix Crust.

Did you know you can make so many delicious things using Pancake mix other than Pancakes of course? Until now, I didn’t. When I came across this recipe on Delish Plan I was so impressed by the idea of using pancake mix as a crust for this breakfast pizza that I had to try it out to experience the taste and flavors.

Breakfast-Pizza-Pancake-Mix-Crust-TTTB

Most of you know already that I’m not a breakfast person at all, but for our new followers – I’m not a breakfast person, which means I’m one of those who skip breakfast (as in proper meal) and are happy to have a cup of chai and call it breakfast. But I do enjoy trying out new breakfast recipes that I find interesting and worth sharing with you all. I also enjoy breakfast plans with friends and love trying out breakfast menus at restaurants, yet I’m not a breakfast person (maybe just at home, lol)

This gorgeous looking and tastefully delicious Breakfast Pizza is so so easy and quick to make. And the best part, you don’t have to worry about making the perfect dough at all – what else could you ask for, right? You can also play around with the ingredients and add all your favorite things to it, mushrooms, bell peppers, tomatoes, sausage or anything at all . This pizza is versatile like that!
Pancake-Mix-Crust-Breakfast-Pizza-TTTB

This was my first attempt with the pizza, it turned out awesome but the eggs on the crust did not come out perfect – like I wanted them to be. It still looked great and tasted delicious. Next time I’ll be more careful when adding eggs on top so that they stay in shape and come out perfect.

Chaat Quick & Easy Ramadan Recipes Recipes Snacks Snacks & Burgers Street Food

Biscuit Bhel (Bhelpuri with a twist)

Bhel Puri – a crunchy, flavorful chaat, is one of the most popular street foods in Pakistan and India. This delicious snack is low in calories but packed with zesty flavors and crunchy textures. A traditional bhel puri is made with a variety of ingredients, one of them being the puri (deep fried crackers) which adds the crunch and also serves the purpose of a spoon to enjoy the chaat. We  added a twist to the traditional recipe by replacing Puri with Biscuits (Crackers) and we have the Biscuit Bhel

Bhel means mixture and Bhel puri is all about textures. While a chaat generally has two or three basic ingredients, bhel puri has a lot more ingredients which includes puffed rice, sev, crumbled puri, onions, potatoes, three different chutneys and anything you would want in your chaat.

I was first introduced to this delicious snack in my childhood when a restaurant Lahore Chatkhara opened up in Lahore that served a variety of popular street foods. Our favorites on the menu were papdi chaat, dahi puri and bhel puri. My sisters and I used to choose one dish each as per our liking and totally did not share with one another (because it was soo good, lol) okay, no we did share because the portions served were generous and we were kids then. But Bhel Puri always was part of our order every time we went there and is still a favorite.
Replacing puri with biscuits (crackers) in Biscuit Bhel does not change the flavors of the chaat at all. It saves you from preparing those deep fried puris, unless you’re getting pre-made puris from the store. You can easily prepare this quick and jhat pat recipe in 10 minutes. It’s super easy, you can use the list of ingredients shared below and can add more as per your taste palate and liking. I do suggest using the ingredients mentioned because these are the basic ingredients for the dish but feel free to adjust as per your taste.
The star ingredients of this chaat are the three must-have chutneys that give this chaat that sweet, spicy, tangy and chatpata flavor. As bhel puri and this biscuit bhel is all about texture – the crispy puffed rice, soft but firm boiled potatoes, crunchy crackers (biscuits), crisp sev, sweet and spicy chutneys and small pieces of onions that squish as you bite into them (salivating??), all these together make this chaat/snack/street food a favorite and oh so delicious!
While you’re here do check out my other recipes and do follow for more delicious recipes coming up for Eid.

Oh hey Spring! The best time of the year, with colorful flowers in full bloom, a lot more greenery around, it is my favorite seasons. Also a great time for those garden parties, brunches, bridal showers or any get-together outdoors. But all those parties are incomplete without a refreshing and gorgeous looking salad and this Berry Citrus Salad has spring written all over it.

This Berry Citrus Salad  is bursting with flavors of spring, with a tantalizing mix of greens, juicy berries and citrus, crunchy candied almonds and pistachios, infused with lemon poppy seed dressing is delightfully refreshing.

Berry-Citrus-Salad-TTTB
I have this thing for salads now. I remember whenever we had lunch or dinner at home, my mother always asked me to make the salad and me-being-me, I’d try out a new salad every time. Everyone loved those, so I guess that’s how it all started.
Berry-Citrus-Salad-with-Lemon-Poppy-Seed-Dressing

Of all those salads I’ve tried and made over the years, this Berry Citrus Salad is my favorite. It’s juicy, has that sweetness from the berries and oranges, is a bit tart and tangy from that pickled onion and pomegranate and some crunchy, sweet and salty pistachios and almonds on the top. Also the Lemon Poppy Seed dressing enhances the flavor and makes a lot more wholesome!

Give it a try before the berries and orange season slips away. It’s so refreshing to look at, it’s even more refreshing on those spring/summer afternoons.

Roasted Tomato-Basil Soup with Garlic Croutons

Have you ever known someone who doesn’t like tomatoes but loves all those spaghetti, pastas, pizzas and tomato sauce? Well, Hello There! (hand wave) – I don’t like raw tomatoes. They look good with that bright red color, they smell good too but I just don’t like the flavor. And when it comes to cooked versions nothing like a tomato base for all these delicious dishes. I never really liked tomato soup either because once I tried that packaged one and it ruined the Tomato Soup experience for me, until recently when I actually tried this fresh Roasted Tomato-Basil Soup my whole world changed!

Fresh fruits and vegetables always, always taste better. In fact any fresh produce tastes better whether home-grown, organic or fresh from the grocery store, dishes prepared with fresh produce always taste amazing.
When it comes to soups in cold winter nights I’ve always loved having Chinese Hot and Sour soup or the Szechuan Soup as both are so rich in flavors and spice levels that they completely warm you up and it’s also so comforting. This time around when I tried a bowl of creamy tomato-basil soup on a cold winter afternoon it felt so good and equally comforting. The flavors were so rich and the texture was very nice, creamy and velvety, I just loved it!
I’m the kind of person who just loves soups, no matter what the season and I think soups shouldn’t be associated with seasons like falls and winters you can have exciting soups in summers too with a variety of vegetables. While this bowl of creamy, roasted tomato-basil soup is very comforting in winters, it also makes an excellent summer meal too. A bowl of this soup, some garlic bread and fresh salad – light, healthy and delicious meal.
I made this soup by using fresh tomatoes and roasting them in a grill pan however you can always roast tomatoes in the oven. In this recipe there are no canned tomatoes and no cream either, so it’s completely healthy.
After making this soup and having it I can safely say there’s nothing like a soup made from Fresh Tomatoes and I’m sure once you try it, you won’t want it any other way either. To make it more delicious I sprinkled some Parmesan Cheese before serving, some cream swirls for presentation and crispy garlic croutons for some texture and crunch.

Everyone has their favorite dish that they love and never get tired of having. But this one dish that is unanimously loved by everyone is Biryani. With it’s different regional variations, one is spoilt for options when it comes to savoring this classic dish full of flavors. My mother makes the Best-est Biryani (I’m sure your mother does too!) she doesn’t use any spice mixes and makes it with her own spices – maybe that’s why it has a distinct flavor.

For people like me who are full-time employed and don’t have much time to prepare the maslas (spices), the ready-to-use Spice Mixes have been a saviour. Giving you the same rich taste in much less time and with much less effort. I’ve been using Shan Masala powders from quite sometime now and have been really satisfied with the taste of the food prepared, every time! These masala powders have already eased cooking so much that Biryani once known as a festive food has now become an everyday dish in homes, which in itself is a celebration of bringing a traditional dish to every home.
Shan Foods has now taken it to another level by introducing their ready-to-use Curry Pastes & Sauces. Which means no more waiting for the onions to caramelize or for tomatoes to soften. No more spice mixes (masala powders) needed, just one cooking paste and your Biryani is ready in no time at all! Now isn’t that great?

At first I was a bit skeptical about using the Biryani Paste because was so unsure how it will be like. The taste,  the amount of spices and what all it contains. But after reading the ingredients list on the back of the jar and the instructions, I was like let’s do this! After all it’s Shan’s bottle and I can trust them with their products.

In a few simple steps and with so less ingredients: Chicken, Yogurt, Biryani Paste and Rice – we had a delicious, aromatic and flavorful Biryani. Although the chicken curry was a bit darker in color compared to what we usually make but the taste was Ahhh-mazing!

These Curry Pastes are available at select store in Lahore, Karachi and Islamabad. Get one today and trust me you’ll love it too.
